To higlight cells in Google Sheets,Select the desired cells and Click on the Fill Color icon and Select the color as per your requirement.

You can select the cells using your mouse cursor .
To choose an entire range,simply click on the first cell and drag you mouse cursor until all the desired cells are selected as shown blue.
You will notice,the selected cells are Highlighted Blue

Alternatively you can also click on the First cell ( in example A2) and then press and hold the Shift key and click on the last cell ( in example B8)

Click on the Fill Color option on top right quick access menu.

From the fill Color Select the desired color after which the text should be atleast visible.

In case you need to change the color,just go back to the fill color option and select the color as per your need.
To reset and revert to the default settings you can click on the Reset option under “Fill Color” drop-down
